Maui restauranteur reflects on adapting to the ever-changing pandemic restrictions

It’s been a month since Maui's "Safer Outside" program requiring proof of vaccines for restaurants and bars kicked in. Now, the county awaits the governor’s approval to loosen some of the COVID-19 restrictions on crowd size and hours.

The Conversation talked to Maui restaurateur Aaron Placourakis who owns several establishments. He reflected on the ups and downs of this past year. He remains positive for things to come as we learn to live with this pandemic. The latest challenge he says now is the rising cost of products due to supply chain disruptions.

Aaron Placourakis' restaurants include Manoli’s Pizza Company, Son'z Steakhouse, Nick's Fishmarket, and Koho's Grill and Bar. This interview aired on The Conversation on Oct. 13, 2021.
