Eating Ahead of the Curve: Vegetarians Give Thanks Too

In 2010, the United Nations’ Environment Program reported that a global shift towards a vegan diet is vital to save the world from hunger, fuel poverty and the worst impacts of climate change. The report concluded that as the global population surges, diets rich in meat and dairy products are simply unsustainable. HPR’s Noe Tanigawa reports on local vegetarians who are eating ahead of the curve.
