In the land where every
plate lunch comes with two scoops of rice, a local baker is going against the
grain.
Chris Sy is the man behind Breadshop,
a new pop up bakery that sells French country-style loaves. Sy has spent his
career working at some of the country’s most renowned restaurants, including
The French Laundry and Alinea.
With Breadshop, he's turned
his attention to making quality bread unlike anything found in the islands. Sy
uses a sourdough starter and finishes the loaves in a kiawe fired pizza
oven. His product is unique for Hawaii
... and has intrigued many new customers.
The idea of Breadshop was
born when Sy found himself craving a type of bread not found on the shelves in Hawaii.

Chris Sy has big plans for Breadshop
in the new year. He hopes to launch a
community supported subscription service, where you can sign up to receive a
fresh loaf on a weekly basis.
